Pumpkin Chocolate Filled Biscuits

For the Biscuit Dough

  1. In a mixing bowl, combine the powdered sugar, softened butter, flour, baking powder, and salt until smooth.
  2. Let the dough chill in the refrigerator for at least 1 hour.
  3. Preheat your oven to 340°F (170°C).
  4. Roll out the dough and use a cookie cutter to create your desired shapes—pumpkin shapes are perfect for fall!
  5. Bake on your Silpat Pumpkin Mat for 14 minutes, or until the biscuits are lightly golden. Make sure you Pumpkin Mat is placed on our perforated Cook N Cool Baking Tray!

For the Chocolate Filling

  1. While the biscuits are baking, melt the dark chocolate using a double boiler.
  2. Slowly add the milk in three stages, stirring continuously to create a smooth ganache.
  3. Let the ganache cool to room temperature.
  4. Once the biscuits have cooled, fill them with the chocolate ganache.
  5. Place the filled biscuits in the refrigerator for 30 minutes to set.
