
Savory Provençal Muffins with Parmesan and Olives

Preheat the Oven: Set your oven to 325°F (170°C).

Prepare the Dry Ingredients : Sift together the all-purpose flour and baking powder.

Mix the Wet Ingredients : In a stand mixer with the whisk attachment, mix the Dijon mustard, unsalted butter, salt, and pepper on medium speed for 2 minutes.

Add Cheese and Eggs : Add the finely grated Parmesan cheese to the mixture. Alternately, add portions of the eggs and sifted flour mixture on low speed until just combined.

Fold in the Olives : Gently fold in the chopped green and black olives.

Fill the Mold : Fill each cavity of the Silpat Classic Muffin Mold 3/4 full. Top with additional olives and Parmesan for extra flavor.

Bake to Perfection : Bake for 15 to 18 minutes, until the muffins are golden and firm to the touch.

Cool and Unmold : Allow the muffins to cool for 30 minutes, then gently unmold for a flawless finish.
