  1. Combine water, sugar, and honey in a pot. Bring to a boil.
  2. Add lemon, orange, and lime peels, star anise, cinnamon sticks, and ginger. Infuse for 20 minutes, then strain.
  3. Melt clarified butter and set aside, slightly warmer than room temp.
  4. Mix the dry ingredients in a bowl. Gradually stream in the infused liquid, stirring until fully combined.
  5. Add the clarified butter and mix until smooth.
  6. Pour batter into the mold and bake at 320°F for 20-25 minutes.
